Our Processing Methods

We take pride in delivering exceptional coffee through careful cultivation and innovative processing methods. Each step reflects our commitment to quality and the rich heritage of Indonesian coffee.
Our Plantation
We have our own coffee plantation located on Mount Papandayan, Garut City. Supported by experienced farmers years, we make sure from the planting process to the packaging process the best coffee bean quality. with an altitude of 1300- 1600 meters above sea level, Mount Papandayan is the choice for our coffee cultivation. The planted area is approximately 250 hectares. We involve farmers from 10 Forest Farmer Groups, with each farmer group consisting of 25 acre of land. Each acre of land consist 3000 coffee plant. Each plant can harvest around 5 kg of coffee cherry. Mount Papandayan which is a volcano, has naturally formed soil fertility through volcanic ash resulting from eruptions around its slopes. The fertile soil makes coffee plants grow well here. You can also enjoy this crop in a cup of coffee. With an altitude of 1300 – 1600 Mdpl, Papandayan coffee has several varieties including Typica, SLine, Yellow Bourbone. The process carried out by all farmers does not go through chemical processes, all use organic processes, from fertilization to unique pest control.
This natural process is also known as the dry process. This process is one of the oldest techniques in the history of coffee processing. After being harvested, the coffee cherries will be spread out on plastic mats and dried in the sun. Some coffee producers sometimes dry them on brick terraces or on special drying tables that have an airflow at the bottom. When dried in the sun, these coffee beans must be turned back and forth periodically so that the coffee beans dry evenly, and to prevent mold/spoilage. In the natural process, the dried coffee cherries are still in the shape of the fruit/cherry, complete with all the layers. This natural and natural process will make the cherries ferment naturally too because the outer skin out the cherries will peel off by itself. General taste profile : This natural process is thought to be able to give coffee a fruity note, with common hints such as blueberries, strawberries or tropical fruits.
WASHED PROCESS or what is also known as the wet process. Generally, this process aims to remove all the skins attached to the coffee beans before drying. After being harvested, coffee cherries are usually ·selected’ first by soaking them in water. The cherries that float will be discarded, while those that sink will still be left for further processing because such cherries are considered ripe. Furthermore, the outer skin and skin of the coffee cherry flesh will be removed using a special machine called a pulper (peeler). The coffee beans that have been removed from the skin are then cleaned again by placing them in a special vessel filled with water so that the remaining skin that is still attached can completely fall off due to the fermentation process. The duration, or how long coffee is fermented, varies from manufacturer to manufacturer. However, it generally ranges from 24-36 hours depending on temperature until water density 12%, the thickness of the sap layer on the coffee cherry, and the enzyme concentrate. The warmer the surrounding temperature, the faster the process. General taste profile: Washed process coffees generally have a cleaner, lighter character, slightly fruity taste, the body tends to be light and soft with more acidity.
